بررسی خواص ضد میکروبی نانوذرات نقره و مس در مقایسه با هیپوکلریت سدیم در برابر پاتوژن‌های آلوده کننده مواد غذایی

چکیده
بیماری­های منتقله از راه غذا تهدید قابل توجهی برای سلامت مصرف کنندگان در کشورهای در حال توسعه است. نانوتکنولوژیبه عنوان یک راه حل امیدوارکننده در جستجوی مداوم عوامل ضد میکروبی برای استفاده در تجارت مواد غذایی است. لذا این مطالعه بررسی اثر ضد میکروبی نانوذرات نقره و مس و مقایسه آن با هیپو کلریت سدیم بر روی پاتوژن­های آلوده کننده مواد غذایی سالمونلا تیفی موریوم، لیستریا مونو سیتوژنز و کلویورومایسس مارکسیانوس می­باشد. در این مطالعه نانوذرات نقره و مس با روش­های شیمیایی سنتز شدند. ویژگی های فیزیکی و شیمیایی نانوذرات سنتز شده شناسایی شد. مورفولوژی با استفاده از میکروسکوپ الکترونی روبشی تایید شد.فعالیت ضد باکتریایی نانوذرات نقره، مس و هیپوکلریت سدیم با استفاده از روش MIC و MBCارزیابی شد.از تست انتشار از چاهک فعالیت ضد باکتریایی نانوذرات انجام شد. میکروگرافهای به دست آمده از SEM نشان دهنده­ی ساختار کروی نانوذرات مس و نقره بود. FTIRدر این تحقیق ارتعاشات کششی مربوط به گروه­های عاملی را در نانوذرات نقره و مس نشان داد. وجود هاله عدم رشد در تیمار پاتوژن­های مورد مطالعه با غلظت­های مختلف نانوذرات نقره و مس حاکی از فعالیت ضد باکتریایی بود. علاوه بر این میزان MIC/MBC برای نانوذرات نقره و مس در برابر پاتوژنها مورد ارزیابی معنادار بود. حساسیت باکتریایی به نانوذرات یک جزء حیاتی در تولید مواد مناسب برای استفاده طولانی مدت در بسته بندی مواد غذایی و تضمین ایمنی مواد غذایی است.نانوذرات نقره و مس سنتز شده در این مطالعه می­توانند آلودگی مواد غذایی را کنترل نموده به جلوگیری از خطرات سلامتی و ایمنی کمک نمایند.

Consumers in poor nations are at risk from foodborne infections. Nanotechnology may help find food-grade antimicrobials. This research compares the antibacterial effects of silver and copper nanoparticles (NPs) and sodium hypochlorite on food-contaminating pathogens Salmonella typhimurium, Listeria monocytogenes, and Kluyveromyces marxianus. This work chemically produced silver and copper NPs. We discovered the produced nanoparticles' physical and chemical properties. SEM verified morphology and size. Synthesized copper and silver NPs were X-ray diffraction-analyzed. To assess the antibacterial activity of silver, copper NPs, and sodium hypochlorite, the MIC and MBC were defined. Diffusion tests from the well assessed nanoparticle antibacterial activity. SEM micrographs revealed copper and silver nanoparticles' spherical shape. This study found functional group stretching vibrations in silver and copper NPs using FTIR. XRD revealed copper and silver NP crystal structures. In the treatment of infections with varying silver and copper nanoparticle concentrations, non-growth halo indicated antibacterial efficacy. In addition, silver and copper nanoparticles have substantial MIC/MBC against the infections. Producing food packaging materials that are safe and long-lasting requires bacterial sensitivity to nanoparticles. This work synthesized silver and copper NPs to minimize food contamination and health hazards.
