اثر آلژینات استخراج شده از جلبک قهوه­ ای روی نگه­داری تخم ماهی قزل­ آلای رنگین­ کمان

چکیده
امروزه ماکروجلبک­های قهوه ­ای به ­مثابة یک منبع از ترکیبات مختلف غذایی و دارویی محسوب می­شوند، همچنین تخم ماهی با وجود اسیدهای چرب غیراشباع و پروتئین بالایی که دارد، در برابر فساد بسیار حساس است. جهت به­ تعویق انداختن فساد محصولات تولیدی از تخم ماهی از نمک و نگه­دارنده استفاده می­شود. با توجه به اثر نامطلوب افزودنی­های شیمیایی، استفاده از نگه­دارنده ­های طبیعی بیشتر توصیه می­شود. در این راستا به­ منظور دستیابی به غلظت بهینه آلژینات از تیمارهای مختلف آلژینات 0/1 درصد، 0/2 درصد، 0/3 درصد، 0/4 درصد و 0/5 درصد استفاده شد که براساس ارزیابی حسی آلژینات 0/2 درصد انتخاب شد. سپس از تیمار شاهد (فاقد نمک و آلژینات)، تیمار A1 (تخم حاوی 2/5 درصد نمک)، تیمار A2 (تخم حاوی 0/2 درصد آلژینات) و تیمار A3 (تخم حاوی ترکیبی از نمک 2/5 درصد و آلژینات 0/2 درصد) جهت بررسی اثر نگه­دارنده­ ها در تخم ماهی استفاده شد. کیفیت تخم ماهی قزل­ آلای رنگین­ کمان طی نگه­داری در یخچال به­ صورت دوره­ای در روزهای (0، 15، 30 و 45) بررسی شد. تیمار A3 در نتایج شیمیایی، میکروبی و حسی تفاوت معنی­ داری با سایر تیمارها نشان داد )0/05(p. نتایج این تحقیق مشخص کرد که استفاده از ترکیب نمک 2/5 درصد و آلژینات 0/2درصد برای ایجاد طعمی مطلوب و افزایش ماندگاری تخم ماهی روش مناسبی است.

Nowadays, brown macroalgae are considered to be a source of various nutritional and pharmaceutical compounds. In addition, fish roe is very susceptible to spoilage due to its high amount of protein and unsaturated fatty acids. In order to postpone the deterioration of roe-related products, salt and preservatives are utilized. Natural preservatives are recommended because of the adverse effects of chemical additives. Thus, different concentrations of pure alginate (0.1%, 0.2%, 0.3%, 0.4%, 0.5%) were chose and then the 0.2% alginate was selected on the basis of the sensory evaluation of the results. Moreover, the treatments including control (salt-alginate-free), A1 (containing 2.5% salt) A2 (containing 0.2% alginate), A3 (containing 2.5% salt and 0.2% alginate) were used to investigate their preservative effects on fish roe. The quality of rainbow trout roe was assessed within 0, 15, 30, 45 days at refrigerated storage. The treatment A3 showed significant differences in microbial, chemical and sensory results compared with other treatments (p≤0.05). According to the results, salting 2.5% and alginate 0.2% method gave good flavor and increased shelf life to the roe.
